Business Spotlight: Charcut-To-Go – A Unique Experience

At Country Bank we have the opportunity to help a wide variety of entrepreneurs start and grow businesses throughout Massachusetts. This month, we are thrilled to showcase Charcut-To-Go, a mobile charcutier and catering company based in Western Massachusetts, co-founded by Rachel Smith and Joe Milillo.


After honing her craft with stints in the hospitality and restaurant industries, Rachel saw an opportunity to offer lighter food options at establishments such as wineries. From this point the idea of a fully mobile, customizable charcuterie offering was born in 2024 and then launched in 2025.


“Our custom-built cart lets guests create their own boards from a curated selection of meats, cheeses, house made dips, fresh crudités, pickled add-ons, and artisanal crackers,” Rachel shared. They can be found offering their custom boards at locations like breweries and wineries, in addition to private venues such as corporate lunches and functions.


Rachel went on to say that they offer “full-service catering for events of any size. From catering and bartending to professional service staff, plates, and cutlery, we’re your one stop shop for a seamless, delicious event.”


Artisanal food establishments are most often as stationary as they are bespoke, but Rachel’s business operates a little differently.


“What sets us apart is our mobility and simplicity,” Rachel explained. “Our cart requires no electricity or generators, allowing us to operate anywhere with ease. We’re compact enough to fit inside nearly any establishment, and we take pride in crafting all of our dips and pickled items in house. Every ingredient is intentionally selected so guests can build a board that’s both beautiful and perfectly balanced.”


When asked to give a helpful hint to entrepreneurs based on her experience, Rachel encourages entrepreneurs to stay organized. “Find a system that helps you track expenses, income, and inventory in a way that works for you,” she says. “Clear, consistent records make it easier to understand what’s working, what isn’t, and how to grow smarter over time.”
